Tokyo Sushi Loha in San Diego, CA is looking for sushi chefs to join our team.

Our ideal candidate is attentive, motivated, and reliable.

Responsibilities

• Preparing food: Sushi chefs prepare sushi, sashimi, and maki rolls, and may also prepare sauces. They may also prepare raw fish, slice ingredients, and make sushi rice. 
• Managing inventory: Sushi chefs order ingredients, manage inventory, and restock supplies. 
• Maintaining quality: Sushi chefs ensure the quality and freshness of ingredients, and inspect the quality of seafood, fruits, and vegetables. 
• Maintaining cleanliness: Sushi chefs clean kitchen tools and workstations to maintain a hygienic environment. 
• Creating menus: Sushi chefs develop menus that incorporate a variety of dishes from Japanese cuisine. They may also research competitors to determine pricing and stay abreast of the latest culinary trends. 
• Training staff: Sushi chefs may train apprentices and kitchen helpers. 
• Communicating: Sushi chefs communicate with wait staff and provide attention to guest satisfaction. 
• Adhering to regulations: Sushi chefs adhere to health and safety codes and regulations. 

Qualifications

• Training
• Sushi chefs often have specialized training in sushi preparation or culinary arts. They may also take classes or train under a master chef. 

Experience

• Sushi chefs often have experience working in a sushi restaurant or similar setting. 
• Knowledge
• Sushi chefs should have knowledge of various sushi types and presentation styles. They should also have a passion for learning about Japanese cuisine, fish, and sushi. 
• Knife skills
• Sushi chefs need expert knife skills to cut fish precisely. 
• Attention to detail
• Sushi chefs should be detail-oriented and precise in their work. 
• Ability to work under pressure
• Sushi chefs should be able to work efficiently and accurately in a fast-paced kitchen environment. 

Communication

• Sushi chefs should be able to communicate well with guests, other kitchen staff, and others. 
• Flexibility
• Sushi chefs should be flexible and available to work during business hours, including weekends and evenings.
